**People**
- Works with Superior and Human Resource Manager to ensure the departmental performance of staff is productive. Duties include:

- Assists in planning for future staffing needs
- Assists in recruiting in line with company guidelines
- Prepares and administers detailed induction program for new staff
- Assists in maintaining a comprehensive, current and guest focused set of departmental standards and procedures and oversees their implementation
- Ensures training needs analysis of Kitchen staff is carried out and training programmers are designed and implemented to meet needs
- Provide input for probation and formal performance appraisal discussions in line with company guidelines
- Coaches, counsels and disciplines staff, providing constructive feedback to enhance performance
- Regularly communicates with staff and maintains good relations
- Approves leave after considering hotel occupancies
- Promote teamwork and quality service through daily communication and coordination with other departments. Communicate with all hotel department heads to stay informed of kitchen needs and ensure timely responses to requests

**Financial**
- Works with superior in the preparation and management of the department’s budget. Duties include:

- Assists in co-ordinating the preparation of the departmental annual budget
- Controls and monitors departmental costs on an ongoing basis to ensure performance against budget
- Works with Purchasing department and manages ordering costs.

**Guest Experience**
- Encourage guest feedback to improve guest satisfaction
- Answer guest questions about dishes and kitchen services
- Help the Food and Beverage Director with event planning

**Occupational Health and Safety Responsibilities**
- Demonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines and ensure your direct reports do the same
- Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures
- Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly
- Initiate action to correct a hazardous situation and notify supervisors of potential dangers
- Log security incidents and accidents in accordance with hotel requirements

**Responsible Business**
- You’ll make sure our dishes are always at their best - we have standards - but it’s down to you to make that room special and memorable for guests
- Keep an eye on competitor activity / industry innovation to develop your own ideas in the kitchen
- Make sure food and drinks are secure and stored safely - always keep stock replenished to minimise waste
- Ensure that all kitchen equipment and environment are hygienic and working properly
- Always follow governmental regulations and company policies and procedures
- Ad-hoc duties - unexpected moments when we have to pull together to get a task done
