Ingredients Development Specialist – Marine Ingredients

To research, develop, and optimize functional ingredients derived from marine sources and seafood by-products, using existing or new technologies. This role ensures scalability, cost-effectiveness, and compliance while leveraging internal manufacturing capabilities or collaborating with OEM partners. Additionally, the role may support process improvements and optimization at the factory to enhance yield and quality.

The Ingredient Development Specialist focuses on ingredient creation and processing technology. Responsibilities include ingredient R&D, process design, and experimental trials. The ideal candidate combines strong technical knowledge in food processing with hands-on lab experience, analytical testing skills, and familiarity with manufacturing operations.

Key Responsibilities:

1. Ingredient Research & Development

  • Conduct research, literature reviews, and patent scoping to identify new ingredient opportunities.
  • Develop new functional ingredients from marine sources and seafood by-products.
  • Explore novel processing technologies.

2. Process Design & Optimization

  • Design experimental protocols and trial run plans for ingredient development.
  • Conduct lab-scale and pilot-scale experiments to validate process parameters.
  • Optimize processing conditions for yield, quality, and cost efficiency.
  • Support factory process improvements, including material qualification and adjustments to enhance performance, as needed.

3. Quality & Compliance

  • Ensure ingredient specifications meet regulatory and customer requirements.
  • Conduct stability and functionality testing under various conditions.

4. Innovation & Sustainability

  • Identify opportunities for upcycling seafood by-products into high-value ingredients.

5. Documentation & Reporting

  • Prepare technical reports, process flow diagrams, and cost analyses.
  • Maintain accurate records of trials and experimental data.

6. Budget & Resource Management

  • Assist in budgeting for trials and technology investments.

7. Lab & Pilot Plant Management

  • Conduct lab work and manage pilot plant trials.
  • Maintain equipment, manage inventory, and ensure safety compliance.

Key Performance Indicators (KPIs):

  • % On-time and on-spec completion of ingredient development projects
  • Number of new or improved ingredient technologies commercialized
  • Cost efficiency and scalability of developed processes
  • Customer and internal feedback on ingredient performance
  • Accuracy and completeness of technical documentation
  • Efficiency in lab-to-production scale-up

Qualifications:

Education:

  • Bachelor's or Master's degree in Food Science, Food Engineering, Biotechnology, or related fields

Experience:

  • 3–5 years experience in ingredient development, food processing, or food manufacturing operations
  • Strong knowledge of protein extraction, and functional ingredient systems
  • Hands-on experience with experimental design, lab work, analytical testing, pilot plant trials/scale-up processes

  • Excellent analytical, problem-solving, and project management skills

  • Able to communicate in English (read and write)

Travel Required:

Occasionally (e.g., supplier visits, external trainings, factory trials (OEM))
