**Position Overview**
The Hygiene Manager is responsible to work with all Food Handlers in the assigned kitchens and restaurants. Ensure to assist food safety to develop and meet the expected standards.
**The Role**
- Implementation of HACCP standards in the Resort
- Training plan for all chefs and food handlers in food safety and food hygiene
- Checks required records as per HACCP check list program
- To ensures all chefs and food handlers compliance and familiar with HACCP guidelines
- Supervises functions of stewarding section in regards to cleanliness, hygiene and sanitation
- Maintains regular contact with government food control section to update new regulations
- Maintains records of food safety and hygiene related forms, checks and audits
- Monthly checks of Capella approved suppliers with the supplier audit to confirm approval as per food safety audit
- Attends departmental F&B and Culinary meetings
- Do investigation with Executive Chef, Executive Sous Chef, Chief Steward or Sous Chef of any issue or complaint as and when they arise.
- Ensure that professional work procedures are in place
- Be fair and be consistent
- Team work among the colleague is to be developed and maintained.
- Maintain harmony between kitchen and service colleague
- Set a good example through behavior, attitude, hygiene, punctuality and hospitality
- Attend Training for development
- Act in accordance to the Supervisor's style of management to ensure consistency in reprimands and avoid colleagues' confusion
- Performs other related tasks as assigned by management
- Flexible working hours as required to complete task
- Do any other assignment assigned by the superior
**Talent Profile**
**Qualification**
- Bachelor's degree in Food Science/ Food Safety is preferred
**Work Experience**
- Minimum 3 years' related working experiences is expected
**Technical Skills**
- Strong knowledge in Food Safety Management
- General knowledge in culinary work tasks
- Competent computing skills (e.g. Microsoft word)
