Key Responsibilities
1. Daily Kitchen Operations
- Supervise production in the central kitchen and support site operations as needed
- Ensure recipe execution, portioning, and preparation methods are followed precisely
- Monitor kitchen staff to ensure timely and efficient output
- Maintain high standards of hygiene and cleanliness at all times
2. Team Support & Training
- Support the training and mentoring of line cooks, section heads, and junior kitchen staff
- Help onboard new team members into Slice's kitchen standards and workflows
- Act as a hands-on leader in the absence of the Executive Chef
3. Quality Control
- Conduct regular quality checks on ingredients, prep, and final dishes
- Flag any inconsistencies and report directly to the Executive Chef
- Assist in recipe testing and refinements based on feedback from the development team
4. Development Process Support
- Work alongside the Executive Chef and culinary development team to test and implement new recipes
- Ensure development recipes are prepared according to specification for tastings and trials
- Provide feedback on production feasibility, equipment use, and training needs during development
- Assist in documentation and handover of approved development recipes to the operations team
5. Inventory & Cost Control
- Monitor daily ingredient usage and assist in inventory tracking
- Work with the inventory team to minimize waste and ensure FIFO systems
- Flag any variances in yield or costing issues
6. Health & Safety Compliance
- Ensure all HACCP and food safety regulations are followed
- Maintain a clean, organized, and compliant work environment
- Train team members on hygiene standards and corrective actions
