Key Responsibilities

  1. Operational Management

  2. Oversee food production and ensure all dishes are consistent with the brand's standards in quality, taste, and presentation.

  3. Supervise all staff in the assigned kitchen and ensure timely service during operations.
  4. Review daily mise-en-place, station setups, and food preparation to  ensure readiness.
  5. Maintain effective coordination with front-of-house for smooth service flow

  6. Food Quality & Presentation

  7. Conduct regular food tastings to maintain standards.

  8. Monitor portion control as per recipe cards and standard guidelines.
  9. Ensure proper use, freshness, and storage of ingredients.
  10. Develop new menu items and seasonal specials in consultation with the Executive Chef.

  11. Hygiene, Safety & Equipment

  12. Enforce strict hygiene practices among all kitchen staff.

  13. Conduct regular inspections of kitchen equipment and cleanliness.
  14. Liaise with Chief Steward for cleaning schedules and inventory checks.
  15. Ensure compliance with food safety standards and work with Engineering for equipment maintenance.

  16. Team Management

  17. Lead daily briefings and training for kitchen staff.

  18. Monitor punctuality, grooming, and discipline of the team.
  19. Conduct performance reviews and make staffing recommendations to Executive Chef.
  20. Supervise staff rosters, leave schedules, and ensure adequate manning.

  21. Cost Control

  22. Maintain food cost within budget by minimizing waste and pilferage.

  23. Track daily consumption and request requisitions in line with par stock.
  24. Monitor equipment breakage and implement preventive maintenance routines.
  25. Ensure accurate portioning and minimize spoilage.
