Position Overview
The Head Sommelier participates in the selection of wines for all the Food & Beverage department.
Represent and adheres to the values of the Chef and the restaurant. He/she provides a high personalized service to our customers, advises and guides them in their choice of wines, mineral water and brandies, but may be advised to dishes as well (food and wine pairing). He/she enforces and proposes creation in order to improve the services and ensures the good maintenance of the ratio drinks of the department. He is responsible for the development and support of the F & B teams. He/she may be required to train employees or students on wines and spirits for the catering department as well as for clients of Capella Bangkok.
The Role
Is responsible for the quality of service and services delivered to our customers.
Is responsible for monitoring the management of customer complaints.
Participates in the development of benefits and the adjustment of pricing strategies.
Participates in monitoring the quality, updating and development of marketing tools in his sector (special wine lists, food and wine pairings, various events...)
Study the competition market.
Is responsible for the quality and maintenance of the equipment and premises of the service.
Could be give oenology lessons in the hotel, or in schools as Ambassador of Capella Bangkok.
Warns management of any issues that affect quality and customer service excellence.
In order to ensure quality customer service and follow-up, it may be necessary to assist and / or replace colleagues in some of their duties, in any department.
Is responsible for the implementation, monitoring and compliance of budgets related to the department F & B (financial objectives, P&L, budgets, cost management, management of the cellar, etc....).
Participates in the implementation and monitoring of schedules taking into account the forecasts of the activity of the hotel and local.
Is responsible for the quality, maintenance and management of equipment inventory and merchandise.
Is co-responsible for the organization and daily coordination of the service.
Participate in daily, weekly and / or monthly meetings to which he is invited.
Is responsible for good communication and coordination within and between services (instructions, briefings, relational...).
Organize and co-host the monthly briefings and meetings of the F & B department.
Participates in the recruitment, training, development and coaching of the team.
Guarantees compliance with the rules of hygiene, safety and working conditions established within Capella Bangkok.
Talent Profile
3-5 years' experience in a similar position in luxury resort/hotel or restaurant.
Excellent interpersonal skills.
Motivator and self-starter, capable of handling multi-faceted projects and of working under pressure.
Acute attention to details.
Strong technical and people management skills.
Understands and respects local cultural, able to adapt to changing environment.
Personable and pleasant to deal with.
Discreet, reliable, diplomatic.
Positive "can do" attitude and flexible approach manages with humility.
High degree of integrity. Strong leadership.

Effective trainer, able to facilitate at all levels.
Comprehensive knowledge of business needs, financial reporting and productivity requirements
