Job Description

  • Responsible of market list and food stock management of the section in charge (ensure ingredients needed not running out of stock)
  • Monitor carefully food cost with confidence and maintain it on line with assigned budget
  • Manages stock levels and supplies in stores for operation and month end inventories
  • Guarantee a high level of food hygiene and safety environments according to HACCP standard
  • Set periodical budget & forecast
  • Analyze monthly P&L and month-end reports, identify deviation from business plan goals
  • Participate in management meetings to review progress towards achievement of business plan goals and develop the annual business plan related for the department.

Qualifications

  • Minimum 5 years' management experience with an international mid-scale brand; currently a Chef de Cuisine or Executive Sous Chef seeking career growth.
  • Strong knowledge of Italian traditional cuisine and creativity in developing innovative menus for Steakhouse and Churrascaria concepts.
  • Hands-on leader with solid understanding of HACCP, food safety, food waste management, and good command of English
