A Chief Butcher is responsible for ensuring all meats and fish are prepared to the highest quality to deliver an excellent Guest and Member experience while training staff and controlling costs in adherence to Hilton policies and procedures.
**What will I be doing?**
As a Chief Butcher, you will be responsible for performing the following tasks to the highest standards:
- Prepare all meats and fish to the highest quality and within company guidelines
- Ensure effective food storage and stock rotation to minimize waste.
- Report any food spoilage or wastage to the Head Chef.
- Maintain clean and tidy working areas to prevent cross-contamination.
- Assist in resolving guest queries in a timely and efficient manner.
- Establish and monitor portion sizes for cuts of meat and fish.
- Control costs without compromising standards, aiming to improve gross profit margins and meet departmental and financial targets.
- Assist other departments and maintain good working relationships.
- Comply with and train staff on Health and Safety and Food Safety standards and legislation.
- Adhere to hotel security and fire regulations.
- Report maintenance, hygiene and hazard issues promptly.
- Be environmentally aware and support sustainability initiatives.

- Achieved Intermediate Food Hygiene Certificate.
- Positive attitude and good communication skills.
- Ability to work under pressure, both independently and as part of a team.
- Relevant qualifications and previous experience in kitchen or butchery.
- Advanced food hygiene knowledge and understanding of current market trends (preferred).
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
- Previous kitchen experience in similar role.
- Advanced food hygiene certification.
- Knowledge of current market trends.
