A Chief Steward oversees and directs all aspects of stewarding operation under the general guidance and supervision of the Executive Chef within the established policies and procedures of Hilton. He/she ensures quality standards of cleanliness, hygiene, and sanitation of all kitchen areas, equipment, and utensils are maintained at all times, leading to guest satisfaction, employee satisfaction, and profit for the hotel.
**What will I be doing?**
As the Chief Steward, you will be responsible for performing the following tasks to the highest standards:
- Maintain high customer service focus with customers in mind.
- Resolve issues proactively and communicate clearly with customers and colleagues.
- Guide and supervise Steward Supervisors and Stewards.
- Stay updated on new cleaning supplies, equipment, trends, and systems.
- Control and analyze cleanliness standard for kitchen areas, banquet rooms (back of the house), equipment, utensils, guests and team satisfaction, operating supplies, cleaning supplies, payroll, related costs, breakage and loss.
- Implement and monitor a detailed cleaning program.
- Stay updated on new cleaning supplies, equipment, trends, and systems.
- Assist stewards during operations and ensure proper handling and maintenance of all kitchen equipment.
- Ensure all cleaning supplies and equipment are sufficiently stocked.
- Maintain and update the steward operating manual, chemical charts and cleaning chart for the team's reference.
- Prepare and monitor the requisition of all chemicals and equipment.
- Report all accidents and incidents.
- Conduct and prepare the monthly operating equipment inventory.
- Prepare purchase requisitions for operating equipment and cleaning supplies.
- Coordinate with the Engineering department for the preventive maintenance of kitchen equipment.
- Inspect all stewarding supplies and equipment received.
- Ensure sanitation levels in all kitchens, canteen, and storerooms areas meet standards.
- Check daily that all kitchen and cleaning equipment are in safe and good working condition.
- Update and review cleaning products, purchase specifications and cleaning methods.
- Direct and check set-up for buffets and banquet functions.
- Provide supervision during the implementation of cleaning schedules.
- Monitor banquet functions, outlet promotions and activities to plan for equipment and manpower provision.
- Acquire contacts from various hotels for additional equipment for large functions.
- Be knowledgeable about fire safety and security procedures.
- Be capable of performing all tasks within the stewarding section.
- Maintain the sanitation level of the garbage room.
- Coordinate with Finance and Security in disposal sales.
- Seek feedback from customers and team members.
- Assist in the restaurant and bar during busy days or special events.
- Understand departmental standards and assess team members' performance against these standards.
- Assign and delegate duties and authority for stewarding operations.
- Plan ahead to ensure adequate resource.
- Ensure shifts are reviewed, handovers are carried out.
- Establish good communication and teamwork within the kitchen team.
- Keep the team informed about departmental, hotel, and company activities.
- Assist with selecting, training, coaching and developing team members.
- Ensure the health, safety and well-being of customers and all team members.
- Carry out any other reasonable duties and responsibilities as assigned.
**What are we looking for?**
A Chief Steward serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the following attitude, behaviors, skills, and values:
- High School diploma or equivalent.
- Minimum of 5 years working experience in a 5-star category hotel.
- At least 1 year of Assistant Chief Steward experience in an international brand hotel.
- Possess a valid health certificate.
- Able to train and motivate team members.
- Able to set priorities and complete tasks efficiently.
- Work well in stressful situations, remain calm under pressure and able to solve problems.
- Able to work in a moist, hot and sometimes loud environment.
