Commis II - Butcher

The Commis II - Butcher is responsible for assisting the Chef de Partie - Butcher in ensuring the preparation and handling of meats and fish are carried out to the highest standards of quality, efficiency, and hygiene. This role involves supporting general kitchen operations, maintaining compliance with HACCP and food safety standards, and contributing to the smooth operation of the butchery section.

**Duties and Responsibilities**:
Butchery-Specific Tasks:

- Prepare all meats and fish to the highest quality and in line with company guidelines.
- Ensure effective food storage, labeling, and stock rotation to minimize wastage.
- Monitor and maintain portion sizes for meat and fish cuts.
- Report food spoilage and wastage to the Chef de Partie - Butcher.

General Kitchen Support:

- When required, assist in the preparation of food for guests and team members efficiently, economically, and hygienically according to standard recipes.
- Work seamlessly with recipes, plating guides, and established hotel standards.
- Support the Chef de Partie in ensuring smooth kitchen operations and prompt service.

Hygiene and Safety:

- Maintain all HACCP and food safety standards, ensuring no cross-contamination.
- Keep all working areas clean, tidy, and organized.
- Report maintenance, hygiene, and hazard issues promptly.

Teamwork and Training:

- Collaborate with other departments and maintain good working relationships.
- Actively participate in training sessions to develop skills and adapt to changes.
- Promote good teamwork and contribute to achieving departmental goals.

Other Responsibilities:

- Assist in inventory taking and managing stock levels in the butchery section.
- Attend off-site events and assist with food preparation when required.
- Respond to guest feedback effectively and positively.
- Perform additional duties and responsibilities as assigned by management.

A Commis II - Butcher serving Hilton brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
Essential:

- Minimum 2 years of experience as a Commis II in a high-standard kitchen or butchery environment
- Basic understanding of butchery processes and portion control.
- Knowledge of food safety and hygiene practices, including HACCP compliance.
- Positive attitude, good communication skills, and the ability to work under pressure.
- Ability to work independently or as part of a team.
- Relevant culinary or technical education preferred.

Desirable:

- Food hygiene certification or equivalent.
- Previous experience in a similar butchery role within a 5-star hotel or fine-dining restaurant.
- Good command of English, both verbal and written, to meet business needs.
